Glorious Fruit Galettes

Ah, glorious fruit galettes. One of my favorites and a sure crowd pleaser. The thing I like best about these cookies is sticking it to the man. You see, I first became aware of these cookies thanks to a Harry & David’s catalog. However, they wanted $26 per pound for these things. Nowaways, the price has gone down a bit. They looked really yummy but I was not willing to pay that much for what appeared to be butter cookies glued together with fruit jelly.

In technical industries this is called reverse engineering: Figuring out the original recipe when you only have access to the final product (or a picture of the final product).

I like making this recipe around Valentine’s Day because fashioning the cookies as hearts is conducive. Make a standard butter cookie recipe, roll, cut, and bake (round or heart shaped; you are somewhat limited in this recipe due to the fact the cookies cannot have too many edges or filling will leak). After you make a huge pile of cookies, it is time to go crazy with the jelly flavors and do the final assembly. Represented are 4 recipes of butter cookies and 8 distinct jelly flavors (not sure why I saw fit to purchase 2 different brands of apricot):

Eat that Harry! You too, David! Actually, I saw some fruit galettes in an actual Harry & David’s store recently. It mentioned something about shortbread rather than butter cookies. I may have to try that. But the butter cookie variant is guaranteed to turn out excellent.

If you care to try this simple recipe, here is one other thing I should point out: It is difficult to bake the butter cookies so they come out soft. However, if you refrigerate the cookies after final assembly, the jelly will moisten the butter cookies for a better eating experience.

    I wish I knew why this was so popular all of a sudden. The recipe is pretty clearly stated in the post — butter cookies connected by jam and refrigerated.

    Butter cookie recipes are plentiful.

    I too love those expensive peach galettes cookies from H & D. It’s becoming to expensive to purchase. Would you be so kind as to share your recipe? My grandmother was an excellant baker and could pick out the ingrediants from just tasting the finished product. Unfortunatly she is no longer with us. Thank you in advance for your recipe.
